About the Wagyu

This month’s limited edition tells a different kind of Wagyu story — one about respect and not letting anything go to waste.

Madonna Wagyu is Yuboku’s own brand, made from mother cows that have finished their role raising calves. Rather than treat these animals as the end of a cycle, Yuboku takes them in and carefully re-fattens them at their own ranch for six months or more. In Japan, beef from mother cows has long been undervalued. In Europe, it’s prized for exactly the opposite reason — a depth of flavor you can’t get any other way.

There’s a real sustainability logic here. A mature cow already has its frame and structure built, so raising it to its best takes far less feed and water than starting from a calf. As with all of Yuboku’s beef, the feed is domestic and produced together with local farmers. It’s an approach that honors the value of the animal’s life while using fewer resources — and because the fattening period is shorter, the beef also reaches the table at a more approachable price than typical Black Wagyu.

Firm, concentrated red-meat umami with a moderate, well-balanced fat. It isn’t heavy.

The flavor reflects all of this. The leaner cuts in particular reward a slow chew, releasing more savoriness the longer you go.
